Moderinse Hong Kong Style Steamed Fish Recipe

Ingredients for sauce:
Maggi Seaoning 1/2tsp/2.5g
Chinese Wine (Hua Diao Jiu) 1/2tsp/3.5g
Soy Sauce 1tbsp/19.5g
Sugar 3tsp/17g
Water 6tbsp/89g
White Pepper a small pinch
Starch 1/2tsp/2g
Cold Water 2tbsp/25g
Method to steps for sauce:
- In a small pot, add maggi seasoning, chinese wine, soy sauce, sugar, water and white pepper. Bring to a boil.
- In a bowl, combine starch and water to form slurry.
- Add slurry and bring the solution back to a boil.
Ingredients for cabbage roll steamed fish:
Vegetable Oil 2tbsp/25g
Minced garlic 1tbsp/18g
White Fish (Sea Bass, Cod Fish, Dory Fish. Threadfish) 1/2 cups /99g
Coriander Leaves 1/4cups/18g
Enoki Mushroom 1cup/52g
Spring Onion 1/4cup/16g
White Cabbage (Boy Choy Leaves) 4cups/180g (12 leaves)
Method to steps for cabbage roll steamed fish:
- Make garlic oil by frying minced garlic in vegetable on low heat. When garlic turn light golden brown, set aside to cool.
- Cut fish into strips or bite size pieces, set aside.
- Wash coriander leaves and drain well, set aside.
- Cut the root end of enoki mushroom, set aside.
- Julienne spring onions or roughly minced, set aside.
- Steam white cabbage leaves for 30 seconds, or until it has slightly soften.
- Place a white cabbage leaf first, followed by enoki mushroom, spring onions, white fish and coriander leaves
- Roll up tightly. Place on a plate set aside until all cabbage roll is done.
- Steam for 8-10 minutes.
- Spoon 1 tsp of garlic oil on each cabbage roll.
- Garnish with grated ginger and spring onion
Chef tip: Create your own roll! Instead of cabbage, replace it with wanton skin or bean curd skin. Use up the vegetables you have in the refrigerator.
Red chili, leeks, red onions are few other vegetables that will go well with this dish!
