Claypot Rice *Healthy Verison* Recipe:

Ingredients:
Carrot    2 tbsp/20g
Frozen Green Peas    1 tbsp/9g

Vegetable Oil    1/2 tsp/ 3g
Sesame Oil    1/2 tsp/3g
Dried Shrimps    30pcs/9g
Dried Chinese Sausage     1/2 piece/20g
Minced Garlic    1/2 tsp/5g

Rice    1/2 cup/105g
Chinese Wine (Hua Diao Jiu)    2 tbsp/23g
Water or Chicken Stock    3/4 cup/150g
Salt    1/8 tsp/ 1.2g
Light Soy Sauce   1 tsp/3g
Fried Shallot    1 tsp/3g

Dark soy sauce 1tsp/3g

Method (Make for 1 serving):

  1. Dice carrot. Set aside with frozen green peas.
  2. Dehydrate dried chinese sausage in hot water for 2 minutes. Remove casing and dice into rough cubes.
  3. Saute dried shrimp and sausage in vegetabe oil for 1 minutes or until fragrant.
  4. Saute garlic until lightly browned.
  5. Add rice and fry for 30 seconds.
  6. Pour in chinese wine. Fry until 3/4 of liquid has been evaporated.
  7. Add in water, salt, soy sauce and fried shallot. Stir, cover and cover for 12 mintues under low heat. 
  8. At 8 minutes mark, add in carrot and green peas.
  9. When the rice is cooked, allow it to sit for 5 minutes. Stir and add in dark soy sauce.
  10. Garnish with cilantro and spring onion (optional).
