How To Make Cheese And Basic Bechamel Sauce At Home

Ingredient for home made cheese:

Fresh Whole Milk   4cups/939g
Heavy Cream   1/2cups   120g
Table Salt   1/2tsp/5g
Lemon Juice   1 & 1/2 tbsp/20g

Method to steps for home made cheese:
  • Combine fresh whole milk, heavy cream and table salt to a large pot. Bring it to a simmering point. Stir constantly.
  • Add lemon juice when small bubbles form on top of the simmering water. Stir constantly.
  • After lemon juice is added, stir and cook for another 3 minutes.
  • Strain cheese curd over a strainer/ cheesecloth. To achieve a dryer cheese, use weight to extract more water out of the cheese.


Ingredient for bechamel sauce:

Butter   1tbsp/20g
White Onion   2tbsp/26g
Plain Flour   1tbsp/10g
Cold Milk   1 &1/4 cups/290g
Nutmeg  a small pinch
Bay leaf   1no
Salt 1/4tsp/1.5g

Other seasoning that goes well with bechamel sauce:
Thyme
Garlic 
Cayenne 

Method to steps for bechamel sauce:
  • Sweat white onion in butter. Do not need to brown the onions.
  • Add plain flour and sauté for 1 minute. It should smell like cooked pastry.
  • Slowly add in cold milk while stirring constantly. This is to prevent flour lumps from forming.
  • Add nutmeg, bay leaf and salt. Simmer for 5 minutes. Stir constantly. 
  • Strain bechamel sauce.
