Bean Spout in Thai Inspired Dressing with Purple Sweet Potato Crust, Coriander Yoghurt, Ginger Cracker and Poached Prawns Recipe

Ingredients for Purple Sweet Potato Crust (4 serving):

Sliced Sweet potato    1/4 cup/40g
Plain flour   1/4cups  42.5g
Water    4tbsp/40g
Olive Oil    1 tsp

Method of steps for Purple Sweet Potato Crust
  1. Steam sweet potato for 5 minutes. Mash.
  2. Add plain flour, water and olive oil to mash sweet potato.
  3. Mix into a smooth dough. Roll dough to a 1mm sheet and cut 9cm circle.
  4. Preheat oven at 200°C or 392°F.
  5. Oil 7.5cm cupcake tray. Place dough in cupcake tray and bake for 7 minutes.
Note: Measure the length of the cupcake tray to determine the length of the dough length. The dough length should be 2-3cm longer. 



Ingredients for Bean Spout in Thai Inspired Dressing:

Bean Sprouts   2cups/113g
Spring Onions    1tbsp/5g
Ground Peanuts    2tbsp/18g
Fish Sauce    1tsp/3g
Soy Sauce  1/4tsp/1g
Lime Juice   1tsp/3g
Sugar   1tsp/4g
Chili Flakes (optional)

Method of steps for Bean Spout in Thai Inspired Dressing:
  1. Boil bean sprouts for 1 minutes. Shock in cold water immediately
  2. Chop spring onions. Put aside.
  3. Mix bean sprouts, spring onions, ground peanuts, fish sauce, soy sauce, lime juice and sugar to combine.


Ingredients for Coriander Yoghurt:

Yoghurt   4tbsp/77.5g
Chopped Coriander Leaves    1tbsp/3g

Method of steps for Coriander Yoghurt:
  1. Combine both ingredients in a bowl. Set in the refrigerator.


Ingredients for Ginger Cracker:

Plain flour    3 tbsp/21g
water    1/2 &1/4 cups/ 160g
Ginger juice   1tsp/3g

Vegetable oil    1 tsp/3g

Method of steps for Ginger Cracker:
1. Mix all ingredients
2. In a non stick pan, add vegetable oil. Heat oil for 20 seconds at high heat. Add small portion of mixture in the pan. Adjust the flame to low and cook until golden brown

Note: This takes practice so don't be dishearten on your first try.



Assemble:
  1. Poached prawns for 3 minutes in simmering water. Shock in cold water immediately. Remove veins. Season with olive oil, salt and pepper
  2. First, place Purple Sweet Potato Crust followed by Bean Spout in Thai Inspired Dressing, Poached Prawns, Coriander Yoghurt and Ginger Cracker.
