Cold Soba Noodles with Spicy Salmon Salsa Recipe
7:30 PMIngredients for soba noodles (Make for 2 serving):
Soba Noodles 99g
Olive Oil 1tsp/3g
Salt a small pinch
Black Pepper 1/8tsp /0.5g
Method to steps for soba noodles:
- Bring a pot of water to boil.
- Follow package direction for cooking time. Drain off water and rinse in cold water until the noodle no longer feel starchy.
- Add olive oil, salt and pepper. Set aside.
Ingredients for Spicy Salmon Salsa:
Salsa Sauce:
Tomato and Cucumber Juice 2cups/464g
Tabasco 2tsp/10g
lime juice 1tsp/5g
salt 1tsp/8g
sugar 2tsp/15g
Method to steps for salsa sauce:
- Bland 6 tomatoes and 1/4 no of peeled cucumber in a food processor. Strain and gather the tomato and cucumber juice.
- Combine with tabasco, lime juice, salt and sugar.
Ingredients for toppings:
Tomato 2nos /207g
Cucumber 4tbsp/50g
Frozen Peas 2tbsp/20g
Frozen Corn 2tbsp/22g
Cauliflower 2tbsp/20g
Small Red Onions 4nos/25g
Coriander Leaves 2tbsp/4g
Salmon 1 cup/225g
Salt 1/8 tsp/ 1g
Method to steps for toppings:
- For tomato, use a knife to make a cross sign. Blanch in hot water for 20 seconds. Shock in ice water immediately. Skin will come off easily this way. Remove seeds. Cut into cubes.
- For cucumber, remove cucumber skin and seeds. Cut into cubes.
- For frozen peas and corn, blanch in hot water for 1 minutes. Shock in ice water immediately. Drain off excess water
- For cauliflower, cut into floral, blanch in hot water for 1 minutes. Shock in ice water immediately. Drain off excess water.
- For red onions, minced finely and set aside
- For coriander leaves, roughly chop and set aside
- For salmon, season with salt and cook in the pan for 1 minutes on each side.
To assemble, combine all the toppings together. Pour salsa sauce over the toppings and marinate in the refrigerator. The longer the marination, the better it is!
