How To Make Easy Mini Lasagna Pie Recipe

Ingredients for cheese filling:

Ricotta Cheese   1cup/236g     
Chopped Garlic   2cloves/10g
Egg   1no/50g
Sour Cream   2tbsp/38g
Grated Parmesan Cheese  1/4 cup/10g
Shedded Mozzarella   1/4 cup/32g
Nutmeg Powder   A small pinch 

Method to steps for cheese filling:
  • Combine all ingredients in a bowl. Mix well. Set aside.

Ingredients for tomato minced meat filling:

Onions   1/4cups/39g
Garlic   1tbsp/14g
Olive Oil    1tbsp/14g
Minced Beef or Chicken or Pork      1cup/280g
salt   1/4tsp/2g
pepper   1/4tsp/0.7g
Red Wine (optional)   4tbsp/42g
Dry Thyme   1/8tsp/0.1g
Water   1cup/235g
Tomato sauce     1cup/250g 


Note: If used store bought tomato sauce, adjust the acidity with sugar. 

Method to steps for tomato minced meat filling:

  • Roughly chop onions and garlic. Set aside.
  • Heat up a large pot over high heat.
  • Add olive oil and minced meat. Sauté until meat is no longer raw. Season with salt and pepper. 
  • Lower the heat to medium. Add chopped onions and garlic, sauté for another 2 minutes. 
  • Deglaze the pot with red wine and reduce until most liquid has evaporated.
  • Add dry thyme, water and tomato sauce. Lower the heat to low and simmer for 30-45 minutes until the sauce become thick and luscious.



Ingredients for spinach dough:

Plain Flour    1 cup & 2tsp /170g
Water    8 tbsp/80g
Spinach   2/3cups /28g

Method to steps for spinach dough:

Note: If you think this is too troublesome to make, I suggest using store bought puff pastry dough or shortcrust dough. All you need to do is to roll the dough into 1mm thickness, cut into square or circle and place it in a oiled cupcake tray
  • Bring water to a boil.
  • Add spinach and blanch for 20 seconds.
  • Blend water and spinach in a blender until smooth.
  • Add to flour. Combine. Cover with cling wrap and let it sit for 2 minutes.
  • Knead to form mixture into a ball. Rest for 15 minutes. Keep pasta covered until ready to use.
  • Divide dough into 8 equal pieces.
  • Roll the dough into 1mm thickness. Cut into square pieces.
  • Fit in a cupcake tray coated with olive oil

To assemble:

  • Place cheese filling first followed by tomato minced meat filling.
  • Then, followed by cheese filling, tomato minced meat filling and cheese filling.
  • Lastly, put as much mozzarella cheese and parmesan cheese as you like. More the better.

  • Bake at 200°C or 392°F for 15 minutes or until the top is golden brown.
  • Let it rest for 10 minutes before serving.
