Chinese Dumpling Recipe

Ingredients:

Dough
Cilantro Leaves    2 tbsp/ 1.2g
Chili Padi    1/8 tsp/0.2g
Plain Flour    1/2 cup & 1tsp /85g
Water    4 tbsp/40g

Filling
Red Dates   1tbsp/6g
Minced Garlic   1tsp/6g
Minced Ginger   1/4tsp/1.5g
Oil    2tsp/6g
Water    2tbsp/20g
Chinese Wine (Hua Diao Jiu)   2tbsp/20g
Sesame Oil    1tbsp/7g
White Pepper    2 pinch
Salt  1/8 tsp/1.2g

Method for dough:
  1. Roughly minced cilantro leaves and chil padi. Set aside
  2. Bring a pot of water to boil together with red dates.
  3. Set aside red dates. 
  4. Combine water and plain flour. Roughly mix and cover for 2 minutes.
  5. Add in minced cilantro leaves and chili padi. Shape until a smooth ball is formed.

Method for filling:
  1. Minced red dates.
  2. In a small pot, slowly fry minced garlic and ginger until fragrant and lightly golden brown.
  3. In a bowl, add in the rest of the ingredients. Mix to combine.

Method for cooking:
  1. Roll dough into 1.5mm thickness and use a ring cutter to cut into circle shape

  3. In a small pot, bring water to a boil. Add 1  tbsp of salt 
  4. Cook dumpling for 5 minutes. Serve with your favorate dipping sauce
