Creamy Crab Stick with Salad and Dressing

Ingredients for Creamy Crab Stick (Make for 4 sticks):

Minced Onions   1tbsp/10g
Minced Garlic   1/2bsp /7g
Olive Oil   1tbsp/13g
Crab Flesh    1cup/150g
White Wine    2tbsp/25g
Cream   1/2 cup/120g
Salt   1/8tsp/1g
Pepper    1/8tsp/0.5g
Lemon juice   1/2tsp/2.5g

Egg   1no/ 52g
Water  1tbsp/11g
Flour   1/3cup /42g
Panko Breadcrumbs   2/3cups/40g

Method to steps for Creamy Crab Stick:
  1. Sweet onions and garlic in olive oil. Do not need to brown the onions and garlic
  2. Add crab flesh and white wine. Reduce white wine until most liquid has evaporated
  3. Add cream, salt and pepper. Reduce sauce by 1/2. Note: This can be use as a pasta sauce!
  4. To form the shape, roll with cling wrap tightly
  5. Keep and chill in the freezer until rock solid. Around 2 hours
  6. Combine
  7. Remove cling wrap and coat with plain flour.
  8. Followed by egg mixture.
  9. Followed by breadcrumbs.
  10. Repeat step 9 and 10. This is to prevent the cream from leaking out of the crust.
  11. To maintain the shape of the crab stick, use aluminium foil to lower crab stick into the oil.
  12. Fry until the crust turns golden brown.
  13. Drain off excess oil and let it sit for 2 minutes



Ingredients for Salad Dressing (Make 2 serving):

Red Onion   2 small piece/5g
Cherry Tomatoes   7nos/50g
Parleys leaves    1tsp/1g
Extra Virgin Olive Oil    3tsp/12g
Lemon Juice   1tsp/4g
Sugar   1/8tsp/1g
Salt   a small pinch
Pepper a small pinch

Method to steps for Salad Dressing:
  1. Slice red onions. Put it in a bowl
  2. Quarter cherry tomatoes. Put it in the same bowl
  3. Roughly chop parleys .Add it in the bowl.
  4. Add extra virgin olive oil, lemon juice, sugar, salt and pepper
  5. Toss well and let it sit in the chiller for 1 hours. 
  6. Serve it with your favourite vegetable salad. 
Note: Toss the dressing again for the lemon juice and the oil to emulsify to make a thick and luscious sauce
